Sparkling Pinot Noir Chardonnay 2016
This sparkling wine is to die for. Creamy, smooth and savoury. Taking around 18 months to make, using traditional methods involving slow bottle fermentation, hand riddling and disgorging. It is dry with great length and a delicate fruit presence. Made from 60% hand harvested estate grown Pinot Noir from our family vineyard and 40% Chardonnay.

Francesca is named after the Winemaker's mother and a tribute to the enormous support and generosity she has provided in the establishment of Nillumbik Estate. The wine has a slightly sweet finish and is made from 60% estate grown Pinot and 40% Chardonnay. Like Francesca, the wine makes you feel happy and alive.

Unwooded Chardonnay 2016
This fruit was grown on one of the most carefully manicured single vineyards in the Nillumbik region and it is probably the best unwooded chardonnay we have ever made. The fruit from these 27 year old vines is luscious, rich and full of flavour. No surprise then, the wine which follows is exceptional. It demonstrate intense stone fruit characters including nectarine and apricot with a hint of honey and almond. Acidity is well balance leaving a smooth and long finish. A great accompaniment to white meats and seafood
Wooded Chardonnay 2016
This wine has become iconic in the Nillumbik range and generally sells out very quickly. Grown in rich volcanic soils on a single vineyard in Kangaroo Ground, it is lightly crushed and pressed then fermented in super premium seasoned and 30 percent new French barriques. It has gorgeous hints of butterscotch and honey, with some fresh fruit notes of Pineapple and Passionfruit, making it utterly irresistible. It has a beautiful creamy texture which comes from barrel stirring every 2 weeks for a period of 6 months. It is a wine you will find very difficult to put down!
Pinot Noir Rosé 2016
This wine is made from the pristine Pinot Noir fruit grown on our estate and as the name suggests, its simply beautiful. The fruit was hand picked, lightly crushed and pressed, followed by a long cool ferment to preserve fruit freshness. This wine has goregous strawberry and raspberry primary fruit characters. Three months aging in seasoned barriques has produced a slight savoury finish and given the wine some texture. Designed to drink now!
Pinot Noir 2015
Domenic's Paddock is named after the Winemaker's father, who continues to maintain the vineyard at the ripe old age of 80, including pruning all 4000 vines by hand. His love and passion for viticulture and his Italian heritage in growing wine, has enabled the Pinot Noir on this exceptional block to flourish. The 2015 growing season was very dry, resulting in mildly stressed vines that produced intense flavours and yielded a low crop. This is a "big Pinot" exhibiting delicious blueberry and cherry fruit characters with beautiful background floral notes with a touch of earthy funk. These natural characters are complemented by hints of mocha and cedar, derived from over 18 months? maturation on premium seasoned French barriques.
Matteo is named after the Winemaker's son and is the namesake of the great, great, grandfather who established the family's first vineyard in central Italy, over 100 years ago.
Nebbiolo is a delicious variety that originates in the north of Italy and is very well suited to Australian conditions! This wine has beautiful upfront fruit characters of cherries and raspberries whilst the prolonged 2 year barrel aging has helped reveal violets, tar and wild herbs. Don't be deceived by the light brick red colour, it packs a huge "flavour punch" with a long lasting pallet. It has great aging potential which will soften the tannins. A wonderful accompaniment to game meat and polenta or antipasti.

This wine is produced from a 2 acre single vineyard in Heathcote and was selected for its rich and concentrated fruit grown on dry soils. It shows intensity of flavour and exhibits blackberry, liquorice and spice, true to the Shiraz variety. Tannins are supple and softened by over 18 months maturation on premium French barriques. Sure to please anyone looking for a big red, this wine expresses its region without ambiguity.

Winemaking can be a fickle process with many factors affecting the quality of each vintage. With this wine, the stars were in perfect alignment and we have managed to produce an unforgettable wine that should be put down for special occassions. This wine is rich and luscious resulting from over three years of barrel aging in premium French barriques!! Heathcote is arguably one of the best “terroir’s” for growing Shiraz in Australia and this is the best of the fruit that comes off this single vineyard which is reserved for special treatment. It's naturally fermented on indigenous yeast, then lightly pressed to avoid over extraction. blackberry, liquorish and mocha characters, dominate the palate with hints of white pepper in the background. Extra time in barrel has produced silky smooth tannins and a velvety finish. This wine has great aging potential and can easily be put down for 10 years.
